Another recipe I’ve modified to my tastes. The pineapple salsa is a common one you can find anywhere online. However, I added a few ingredients. I enjoyed the sweetness of the pineapple with the kick of the jalapenos. And the bacon added a lot to the mix because……..well…………bacon.
- 1 cup finely chopped fresh pineapple
- 1 half of a large purple onion chopped fine
- 2 green onions chopped fine
- 1/2 green bell pepper chopped fine (red or yellow would work fine as well
- 2 tablespoons of cilantro
- 2 jalapeno peppers, chopped
- 2 tablespoons of honey
- 6 strips of bacon
- 2 tablespoons of lime juice
- 6 large pork chops
Mix all of the ingredients (except bacon) thoroughly in a large bowl and refrigerate for an hour or more. Cook the bacon until crispy and then set aside on a paper towel until it is completely cool and then crumble into smaller pieces.
I fried my pork chops using a bit of the bacon drippings and some coconut oil seasoned with a homemade mix. I imagine you could also bake them if you desired. There are a hundred variations so use whatever you feel makes it great. That’s the joy of cooking, I think. That and the cardio workout from dodging spattering bacon grease.
Once the chops are ready, add the bacon to the salsa and combine thoroughly and then spoon over the chops. Like I said, it’s a bit sweet with a little kick, which I found quite delicious. Since there are no leftovers I am assuming everyone else felt the same.
